Roasted Pumpkin Seeds

Makes: 2 servings, 1/4 cup each

  • 1/2 cup pumpkin seeds
  • butter-flavor cooking spray
  • 1/8 tsp. salt

  • RINSE seeds; remove any stringy membranes. Place seeds in single layer in 15x10x1-inch baking pan. Let stand at room temperature about 3 hours to dry.

    PREHEAT oven to 350°F. Place seeds in single layer in baking pan. Spray generously with cooking spray; sprinkle with salt.

    BAKE 8 to 10 minutes or until lightly browned.

    TIP: Carve a pumpkin with your children and then have fun making this special recipe. A serving of pumpkin seeds is 1/4 cup.

    We roast pumpkin seeds every year after carving our jack-o-lantern. You can use a much higher quantity of seeds and bake for roughly the same amount of time.
